The best vegan chickpea based eggless salad ... truly no yolkin' about it. ;)
Just pile it high on two thick slices of soft squishy bread and add a handful of sprouts to kick this over the top. A blend of smashed chickpeas, crunchy celery, fine diced sweet pepper, tangy dill pickles, and the fresh kiss of mild green onions all brought together with a creamy mayo dressing with the zing of fresh lemon juice and subtle hints of dill. Soooo yummy that it those classic memories flooding back.
